Oh Oh Chorizo





So this is my chorizo pasta dish .. it is one that not only me and my husband enjoy .. but one that my older princess just adores. The chorizo has a wonderful spicy smokey flavour that just adds glamour to this dish. The beautiful colours from the chorizo turns the whole dish the same colour. Now, you may have noticed that I do not add salt or chilli to this dish, as I find the chorizo adds enough of both itself. However if you like more salt or chilli, be mindful when adding.
If like me you have children who will be eating this dish, then add the wine at the end after taking their portion out.
 
What you need to serve 4
·         1 onion cut in to small pieces
·         4 garlic cloves
·         1 leek sliced in to rings
·         1 large or 2 small courgettes cut in to 4 long ways then diced in to small pieces ( they should resemble small triangle shapes)
·         1 chorizo ring ( I use a cured spicy Spanish chorizo) this is usually 200g. Slice into round thin rings then each ring cut in half.
·         1 can chopped tomato tin 400g. Put this in to a blender and blend to a sauce consistency
·         Red wine 150 mls. Use any red wine that you would be happy to drink.
 
·         Black pepper to taste.
 
·         Fettuccine 100g per person ( this is the usual guideline but if you're anything like me, that just doesn’t do it, so I usually use 120g per person which is more generous )
 
·         Grated cheese to serve as much or little as you like. I have used  a mature cheddar
 


 
How to put together
Fill and boil the kettle and leave to one side
Add one to two teaspoons of olive oil to a pan then add the onions and leeks. Once they have begun to turn golden, add the chorizo and the courgettes. Let the chorizo soften a bit and add the garlic. Fry all the above together until all have turned a golden colour. The whole dish by now should have taken the colours from the chorizo and you should end up with a slight red orange tint. Add the chopped tomato sauce and add black pepper to taste. If adding wine, add this in now .Let the sauce simmer on a low heat for 10 – 15 minutes
Boil the fettuccine according to the packets instructions.. once cooked drain..
Add the cooked fettuccine to the sauce and stir.
Top with chopped parsley and serve generous helpings. Grate some cheese and allow to melt.
